Breakfast is the most important meal of the day for me. When I don't eat in the morning I have absolutely no energy, plus the hangry me is coming out, needless to say that I never skip this meal. During the week I try to eat as healthy as possible, so here is my favorite quick and easy healthy breakfast recipe!
On Sundays I like to prepare my batch of granola for the upcoming week. Here I added as much oatmeal, nuts, raisins and coconut flakes as I could. I bake the mixture on medium heat and keep keep keep stirring, that part is super important because it easily burns.
I like to add a tablespoon of honey to the mixture as well, but it's not necessary. Keep stirring until it has this golden brown color.
I normally use unsweetened almond milk, but you can use any type of milk you want.
These are the ingredients I like to use as toppings: berries, hempseed, chia seeds, banana, honey and peanut butter. I always use a tablespoon of peanut butter as topping because it keeps me full until noon, I really notice the difference when I don't use it. If you don't like peanut butter you can switch to almond butter or use some yoghurt to put on top. But again, you can use any type of topping you like, as long as it is healthy

So I got a new routine lately, every sunday I make these cute raw bites. They are made with natural ingredients only and make me resist the unhealthy snacks during the week. They are small but perfect for those little hungers and superduper easy to take with you on the go. Here's the recipe (very easy), let me know if you've tried them out!
What you will need:
- 200 gr pitted dates
- 100 gr oatmeal
- 2 tbs cocoa powder
- 1 tbs coconut oil
- 75 ml coffee or water
Grind the pitted dates and oatmeal so it becomes a paste.
Mix this paste with the cocoa powder and half of the coffee/water. Let it mix and pour the other half of coffee/water in the mixture.
Roll little balls with the mixture and roll them in coconut flakes.
That's it! I recommend you to store them in the refrigerator.

Hey guys! Tea and some comfy clothes, that's all i need sometimes. Oh i couldn't live without tea i think. My green tea in the morning and camomile tea in the evening are my daily ritual. But i recently discoverd this raspberry tea, it's super sweet! It really helps when i have a sugar craving. Ok enough tea talk, i hope i don't sound like an old lady haha!
I just finished a day with alot of thesiswork, so i have nothing else to report unfortunately. Two weeks to go and it will all be over! It's so hard these days because the weather is finally sososo good over here! Let's hope it stays like this when i've handed in my thesis :) xx A.
